Lake Stone is an ash-ripened bloomy rind goat cheese. It is aged for several weeks until it develops a lovely creamline. Lake Stone’s flavor is slightly sweet, a result of the excellent goat milk used to make , balanced by an underlying depth of slight funkiness from the cultures used to make the cheese.
