Raspberry Goat Cheese Muffins by Brittany Greene
Ingredients:
- 1 ¼ cups Raspberries, fresh or frozen
- 1 ¾ cups All-purpose flour
- 1 tsp Baking powder
- ½ tsp Baking Soda
- ½ cup Brown sugar, light
- ½ tsp Salt
- ½ cup Sugar
- 1 tsp Vanilla extract
- 3 eggs
- 5 oz Butter, unsalted
- 7 oz Goat cheese
- ¼ cup Milk
Directions:
- Preheat oven to 350 degrees
- Cream butter and sugars till light and fluffy
- Add in goat cheese and mix till combined
- Add eggs and vanilla
- Alternate adding dry ingredients with milk
- Gently fold in raspberries and fill muffin tins
- Bake at 350 degrees for 20-25 minutes, rotating once halfway through
