Our Gouda follows a traditional Dutch Gouda recipe until it moves to the aging room. However, unlike its Dutch forebares Gorge Trail Gouda is not waxed. This leads to a slightly drier paste and a more assertive flavor. It is made from very fresh, local cow’s milk, then aged for around six months, until it has reached the peak of ripeness.
