At Lively Run Goat Dairy, our cheeses are handcrafted in small batches using fresh goat, cow and sheep milk from our own partner farms in Interlaken, NY, the Finger Lakes and beyond. Each cheese is a reflection of our commitment to quality, animal care, and sustainable farming. From creamy chèvres to bold aged varieties, our cheeses are made with a mix of traditional techniques and our own innovations that bring out rich, complex flavors. We make all of our goat and cow milk cheeses right here at our farm in Interlaken New York.

We’ve been making cheese as a family business in the Finger Lakes for over 40 years.

Our Cheeses
Goat Milk ~ Blue Cheese ~ Cave Aged
An unusually earthy, not sharp blue cheese . It was named “one of the most influential cheeses” in the United States by Saveur magazine, being one of the very first domestically made Blue cheeses from 100% goat’s milk.
The flavor is earthy, umami and mushroom notes. The paste is firm and crumbly.
Goat Milk ~ Hard- buttery~
Finger lakes Gold is a hard aged goat milk cheese, made from pasteurized milk. It is aged for a minimum of 90 days. Finger Lakes follows an original recipe, created by Lively Run’s cheese maker to showcase the quality and flavor of the goat milk from which it was made. Its unique flavor is a reflection of the Finger Lakes Terroir.
Nutty, and mellow, the paste is firmbut retains the creaminess of the milk. Grassy and pastoral notes balance out a burnt sugar finish. Finger Lakes Gold is a good melting cheese, and pairs well with dry Finger Lakes Rieslings, crisp lagers, slightly hopped ales, and tart jams.
Finger Lakes Gold won awards at the American Cheese Society’s Competition in 2022, 2023 an 2024.
Goat Milk ~ Extra Aged ~ Rich Taste
A longer-aged version of Finger Lakes Gold with deeper flavor, firmer texture, and limited availability.
Burnt sugar notes are intense on the finish, along with a strong bone broth/umami quality.
Finger Lakes Gold won first place in its class in the 2019 ACS competition, and placed in the top 15 cheeses across all categories for Best in Show contention.
Finger Lakes Gold Reserve pairs wonderfully with a Perfect Manhattan, cured meats or an aged Balsamic Vinegar.
Goat Milk ~ 2 years aged-Hard
Phebe is named after the first woman that settled on the land that is now Lively Run Goat Dairy.
Phebe undergoes a cheddaring and milling process, is molded and pressed into 10lb wheels and ages for a minimum of 1 year on wooden boards.
Phebe is a good grating cheese, the color of the paste is caramelly dark. The flavor has strong umami, as well as caramel notes.
Goat Milk ~ NY Style Cheddar-Sharp
Interlaken is made like a NY style Cheddar , but using 100% goat milk.
After chddaring, milling and pressing it is vacuum packed and rests for a minimum of 6 months in our aging room.
The result is a creamy, yet crumbly and firm , sharp cheddar. It is an excellent melting cheese and great for snacking or adding an extra kick to Reuben sandwiches.

Goat Milk ~ Bloomy Rind ~ Rich Taste
Lively Run’s Bucheron is our version of a classic French aged goat cheese. We make the Bucheron in the classic style: a lactic set cheese, formed into 2 lb logs and aged until it develops a lovely, snow white rind.
The cheese exhibits a beautiful creamline and a silky texture along with a clean tangy lactic flavor.
Goat Milk ~ Bloomy Rind-Brie Style
New Moon is a bloomy Rind goat milk cheese made from pasteurized goat milk. Lively Run took over making this delicious cheese from Old Chatham Creamery in 2025.
We have taken their recipe for this classic goat milk bloomy rind cheese and adapted it to our goat milk and creamery.

Our Cheeses
Cow Milk ~ Blue Cheese ~ Natural Rind
Blue Yonder is a natural rind pasteurized cow milk blue cheese. The cow milk that Blue Yonder is made from comes from a single herd oh Holsteins, lovingly raised on a small family farm.
A robust blue cheese with strong marbling, the high butter fat fat content of the single- herd sourced milk results in a fudgy texture with buttery flavors supporting the pungency of the blue mold. Blue cheese is a blue cheese lover’s blue cheese: rich and intense, it pairs well with ice wines, honey, and red meats.
It won an award at the American cheese Society’s competition in 2023.
Cow Milk ~ Beer Washed ~ Malty
Shire is a natural rind, hard aged cow milk cheese made from pasteurized milk. During the cheese make process, the curds are washed with Shire Ale, an award winning Scotch-style ale produced by Hopshire Brewery located in Dryden NY, local to Lively Run Dairy.
The cheese is strongly flavored by the dark, malty, slightly smoky beer. Shire is imbued with dark roast coffee and toffee notes by its bath in beer. This cheese was developed by Lively Run as a collaboration with like-minded local artisans, and the cheese is a reflection of the idea that beer cheese should actually taste like the beer it is made with. Shire pairs well with dark, malty beers ( particularly Scotch Ales), toasted pumpernickel bread, and tart cherries or cranberries.
Shire won an Award at the American Cheese Society’s Competition in 2023.
Cow Milk ~ Bloomy Rind ~ Creamy
Sheldrake Moon is a pasteurized cow milk, small- format bloomy rind cheese. The milk comes from a single herd of Holsteins, lovingly raised on a small family farm.
Named after the reflection of the moonlight on the waters of Cayuga Lake at Sheldrake Point, Sheldrake Moon is a mellow brie-style cheese.
As the cheese ages, the paste develops a lovely cream line and lucious, pudgy texture with a rich buttery flavor.
Sheldrake Moon pairs wonderfully with sparkling wines, dry ciders and stone fruit.
Cow Milk ~ New York Style ~ Cheddar
Lake Effect Cheddar is a pasteurized NY style Cheddar, made from the milk of a single herd of Holsteins.
It is aged for a minimum of 6 months.
Lake Effect Cheddar is a medium sharp Cheddar with a firm texture.
It is a good melting cheese and pairs well with ciders, beer and apples.
Cow Milk ~ fresh ~ Squeeky
Our Cheese Curds are made from the milk of a single herd of Holsteins raised on a Family Farm close to Lively Run Dairy.
Our curds are fresh with a milky flavor and a squeaky texture, which can be refreshed by placing in the microwave for 10 seconds.
The cheese curds are excellent for melting on pizza, or filling Jalapenos for Jalapeno Poppers.

Sheep Milk ~ Blue Cheese ~ Rindless
Seneca Blue is a rindless pasteurized sheep milk blue cheese, marbled with delicate lines of blue. The sheep milk used for this product comes from a cooperative of small sheep dairies in Central NY. These dairies are focused on animal welfare and ensuring that their sheep are happy and healthy, producing amazing milk that allows this cheese to shine like the light reflecting off of Seneca Lake on a summer evening.
Seneca Blue has a silky, smooth texture with rich flavors of smoke meat and a hint of tropical coconut from the blue veining. Both the wheels and 4 oz retail packages are wrapped in traditional blue cheese foil, in order to protect the delicate texture and blue veining of the cheese.
