Description
Phebe is named after the first female settler on what is now Lively Run Dairy.
Phebe is made from goat’s milk. The process involves both a cheddaring and a milling step. It is aged with natural rind on wooden boards for a minimum of 10 months. It is grateable with strong umami flavors, balanced by a caramel finish.
And it is delicious!
