Seneca Blue is our newest cheese. It is our first cheese made from sheep milk!
It is a rindless pasteurized sheep milk blue cheese, marbled with delicate lines of blue. The sheep milk used to produce this cheese comes from a small cooperative of small sheep dairies in Central NY who are focused on animal welfare and ensuring that their sheep are healthy and happy, producing amazing milk that allows this cheese to shine like the light reflecting off of Seneca Lake on a summer evening.
Seneca Blue has a silky, smooth texture with rich flavors with of smoked meat and a hint of of tropical coconut from the blue veining. Both the wheels and the 4 oz pieces are in traditional blue cheese foil in order to protect the delicate texture and blue veining of the cheese.
