Cheese Sauce for Macaroni and Cheese by Hazelnut Kitchen

Hazelnut Kitchen is a local restaurant located in Trumansburg. Make sure to stop by for more delicious food!

4 oz butter

4 oz flour

½ cupe diced onion

2 chopped garlic cloves

5 sprigs of thyme

½ tsp. cayenne

½ gallon milk

8 oz cream cheese

1.5 pounds Cheve OR Cayuga Blue (more or less to taste)

Salt and pepper to taste

 

Melt butter and add flour.

Cook on medium heat until “nutty” about 5-10 minutes.

Add onion, garlic, thyme, cayenne.  Cook about 5 minutes.

Whisk in milk and heat on medium until mixture starts to thicken and boil.  (the longer this takes the better.)  Stir often.

Turn off heat.

Blend together cheese and mixture until smooth.

Season and toss with your favorite pasta.
